Hi matcha loversss!!!
A yummy recipe for hojicha macadamia cookies🤩
I honestly love hojicha for its nutty and roasted flavour and oh my gosh these cookies are sooo good!
Ingredients
1 cup unsalted butter, browned (melted in a pan)
2 cups plain / all purpose flour
1 tsp baking soda
1 tsp salt
1 tbsp of your favourite hojicha powder
1/2 white sugar
1/2 brown sugar
2 tsp vanilla extract
2 eggs at room temperature
1/3 cup white chocolate chips
1/3 cup chopped macadamias
Method
- brown the butter (melt in a pan until it browns)
- mix the melted butter, white and brown sugar together
- whisk the 2 eggs
- one bit at a time, add the eggs and vanilla to the butter/sugar mixture. mix to incorporate before adding more
- sift the flour, baking soda, hojicha and salt together
- slowly add the dry ingredients to your wet until just combined
- chop white chocolate (if using a block of chocolate) and macadamias, then add to the cookie mix
- use 1/4 cup or an ice cream scoop to make your cookies and roll into balls onto baking paper
- preheat your oven to 180 degF fan forced
- put the cookies in the oven for 9-12 minutes (until they’re spread and golden) [I usually put them in the 3rd rack to prevent burning]
- let them cool for 10 minutes and then EAT!!!
